APPETIZERS

Pizza Dip
Ingredients: 2 cans Pillsbury breadsticks, 1 block of cream cheese, 1 tsp Italian Seasoning, 1 jar pizza sauce, 2 cups shredded mozzerella cheese, 1/2 cup shredded parmesan cheese, scallions and green peppers.

Mix the cream cheese and seasoning together and then cover the bottom of a 9x13 pan.  Mix the cheeses together and sprinkle 1/2 into pan.  Cover the cheeses with the pizza sauce.  Cover with the rest of the cheese and scallions and peppers.  Bake at 350 for 30 minutes.  Serve warm or cold.

MAIN COURSE

Pineapple Stuffing
Ingredients:  2 cups butter, 4 cups sugar, 16 eggs, 4 cans crushed pineapple, unseasoned croutons

Drain juice from pineapples.  Cream butter and sugar.  Beat in eggs 1 at a time.  Stir in pineapple.  Fold in croutons.  Bake uncovered for 1 hour at 350.  Feeds 30 - 35 people. 

Tortellini Minestrone Soup
Ingredients:  1 chopped red onion, 2 crushed garlic cloves, 1 bunch of fresh chopped parsley, large  can of tomato puree, 2 quarts vegetable broth, 5 sliced carrots, 3 sliced celery stalks, 1 small can drained kidney beans, 1 pack of frozen cheese tortellini, 1 tsp. salt, 1/2 tsp. pepper, 1 tbsp oregano, 1 tbsp. basil, fresh parmesan cheese, 2 tsp olive oil

Saute onion, parsley, and garlic in the olive oil in a large pot.  Add celery, carrots, broth and tomato puree along with the herbs and simmer for 60 minutes.  When vegetables are just about tender add tortellini and kidney beans until cooked.  Top with parmesan cheese and serve.

DESSERTS

Death By Chocolate
You need: 1 box chocolate cake, 2 large boxes instant chocolate pudding (use round cake pans), 1 large tub Cool Whip, 8 Heath bars, 1 large bowl and chocolate jimmies

Make the cake and pudding according to the directions on the box.  Once the cake is cooled layer the dessert as follows: 1 circle cake, 1/2 pudding, 1/2 Cool Whip, 4 Heath bars, cake, pudding, Cool Whip, Heath bars, Jimmies.  Chill and Enjoy

Canolli Dip
Ingredients:  2 cups Ricotta cheese, 8 oz. softened cream cheese, 1 1/2 cups confectionary sugar, 1 tsp. vanilla, 1 cup milk chocolate chips.

Mix all ingredients together. Chill.  Serve with waffle cones or vanilla wafers.

Pineapple Cupcakes
You will need: 1 box angel food cake and 1 large jar of crushed pineapples in their own juice.

Make the cake according to the directions on the box but instead of water use the pineapple and it's juice to mix the cake.  Bake at 350 for 15 minutes. 

Apple Crisps
Ingredients:  6 medium sliced Granny Smith apples, 1 1/4 c brown sugar, 3/4 c. flour, 3/4 c. oatmeal, 1/2 c. butter, 1 tsp. nutmeg, 1 1/4 tsp. cinnamon

Preheat oven to 375.  Butt the bottom and sides of a 9mx 11 baking dish.  Place the sliced apples at the bottom of the baking dish.  Combine all the other ingredients together in a bowl to make a crumbly mixture.  Sprinkle on top of the apples.  Back for 30 minutes.  Serve warm.
